Bean Pie

  1. Heat oven to 400u0b0.
  2. Grease 10-inch pie plate.
  3. Heat beans in 1-inch salted water (1/2 teaspoon salt to 1 cup water) to boiling. Cook, uncovered, for 5 minutes.
  4. Cover and cook until tender, 5 to 10 minutes; drain.
  5. Mix beans, mushrooms, onion, garlic and cheese in plate.
  6. Beat remaining ingredients until smooth, 15 seconds in blender on high or 1 minute with hand beater.
  7. Pour into pie plate.
  8. Bake until knife inserted between center and edges comes out clean, 30 to 35 minutes.
  9. Cool 5 minutes.
  10. Yields 6 to 8 servings.
