Coconut Thumbprints
- 4 ounces cream cheese
- 2 tablespoons butter
- 2 tablespoons milk
- 12 cup packed brown sugar
- 34 cup all-purpose flour
- 1 teaspoon baking powder
- 14 teaspoon salt
- 1 12 cups dried shredded coconut (dessicated)
- 13 cup finely chopped crystallized ginger
- 13 cup finely chopped maraschino cherry
- 1 cup toasted dried coconut
- 24 maraschino cherries, halved
- Preheat oven to 350F Cream together cream cheese, butter, milk and brown sugar.
- Sift together flour and baking powder and salt,and stir into creamed mixture.
- Stir in coconut, ginger and chopped maraschino cherries.
- Refrigerate dough for 1 hour.
- Roll dough into 3/4" balls, then roll each ball in toasted coconut.
- Press a maraschino cherry half into the top of each ball (or make an indent with your thumb and fill with jam).
- Bake at 350F for 15 - 17 minute.
