Caramelised Onion, Olive and Anchovy Canapes

  1. Heat the oil and butter in a saucepan.
  2. Add the onions, and cook over a gentle heat until onions are soft and slightly browned.
  3. Add the brown sugar, and cook a further 10 minutes.
  4. Allow to cool to room temperature.
  5. Serve on crackers with a strip of anchovy and an olive half.
