Caramelised Onion, Olive and Anchovy Canapes
- 1 teaspoon oil
- 1 teaspoon butter
- 3 medium onions, sliced into thin rings
- 2 teaspoons brown sugar
- 125g CAPTAIN'S TABLE* Water Crackers
- 45g canned anchovies, drained and sliced into strips
- 1/2 cup olives, halved
- Heat the oil and butter in a saucepan.
- Add the onions, and cook over a gentle heat until onions are soft and slightly browned.
- Add the brown sugar, and cook a further 10 minutes.
- Allow to cool to room temperature.
- Serve on crackers with a strip of anchovy and an olive half.
