Banana Monkey Cake

  1. Heat oven to 350 degrees F. Grease and flour 13x9-inch baking pan; set aside.
  2. Combine sugar and 1 cup butter in bowl.
  3. Beat at medium speed, scraping bowl often, until creamy.
  4. Add eggs; continue beating until well mixed.
  5. Add bananas; beat at low speed until well mixed.
  6. Add all remaining cake ingredients.
  7. Continue beating, scraping bowl often, until mixed.
  8. Pour cake batter into prepared pan.
  9. Bake 35-40 minutes or until toothpick inserted in center comes out clean.
  10. Cool 1 hour.
  11. Beat 1 1/4 cups butter in bowl until creamy.
  12. Beat at low speed, gradually adding powdered sugar and salt alternately with whipping cream and vanilla until well mixed.
  13. Stir in corn syrup.
  14. Place 1 1/2 cups frosting into another bowl.
  15. Add cocoa; beat until well mixed.
  16. Place 1 1/2 cups white frosting in another bowl; tint with 1 drop red food color and 1 drop yellow food color.
  17. Tint remaining white frosting with yellow food color.
  18. Place cooled cake upside down onto platter.
  19. Frost entire cake with yellow frosting.
  20. Print 2 copies of template.
  21. Cut around solid lines for full monkey head template.
  22. Cut second copy out around dotted line for face template.
  23. Place full monkey head template onto cake; draw around cut-out edges with toothpick.
  24. Remove template.
  25. Place face template onto cake; draw around outer edge with toothpick.
  26. Remove template.
  27. Cover face and inside of ears with orange frosting piped stars.
  28. Pipe chocolate frosting stars onto head and ears.
