Chrissy's Mediterranean Chicken
- 4 boneless chicken breasts, sliced lengthwise to create a pocket for the stuffing
- salt & pepper
- 14 ounces diced tomatoes
- 6 ounces artichoke hearts, quartered
- 8 ounces kalamata olives, pitted and halved
- 12 cup feta cheese, crumbled
- mediterranean herbs
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 cups Baby Spinach
- Preheat oven to 375.
- Pound breasts.
- Sprinkle with salt/pepper and herbs.
- Place each one on foil or parchment paper square.
- Chop and mix remaining ingredients in a bowl.
- Stuff chicken with mixture.
- Stuff a handful of baby spinach in each breast.
- Poured some lemon juice and some of the olive juice over the chicken
- Wrap up breast in foil/parchment square
- Place in baking dish and bake 20-23 minutes.
- Enjoy over rice -- tasty!
