Puerto Rican Red Beans and Rice

  1. In a medium saucepan, cook the bacon over moderate heat, until browned, about five minutes.
  2. Add the onion and adobo seasoning and saute for five minutes, until the onions are just beginning to brown.
  3. Add the tomato sauce, beans and broth and cover.
  4. Simmer for 20 minutes.
  5. Season with salt and pepper and serve over white rice.
