Oven-Baked Apple-Pecan Pancake

  1. Heat oven to 450u0b0.
  2. Combine pancake mix, milk, eggs and 1 teaspoon sugar.
  3. Mix well.
  4. In 9 or 10-inch ovenproof skillet, saute apples in melted butter over medium-high heat until tender. Remove skillet from heat; sprinkle apples with nuts.
  5. Pour batter evenly over apples and nuts.
  6. Combine remaining sugar and cinnamon; sprinkle over batter.
  7. Cover skillet with lid or foil.
  8. Bake at 450u0b0 for 10 to 12 minutes or until pancake is puffed and sugar melted.
  9. Loosen side of pancake from skillet; cool slightly.
  10. Cut into wedges.
  11. Makes 4 to 6 servings.
