Low-Fat Carrot And Zucchini Bars With Citrus Icing
- 1 1/2 c. flour
- 3/4 c. brown sugar
- 1 tsp. baking powder
- 1/2 tsp. ginger
- 1/4 tsp. baking soda
- 1/2 c. Egg Beaters
- 1 1/2 c. shredded carrot
- 1 c. shredded zucchini
- 1/2 c. raisins
- 1/4 c. vegetable oil
- 1/4 c. nonfat, plain yogurt
- 1/4 c. honey
- 1 tsp. vanilla
- 1 tsp. butter flavoring
- Citrus Cream Cheese Icing
- In larger mixing bowl, combine first 5 ingredients; mix well and set aside.
- In another large bowl, combine remaining ingredients except icing; mix well.
- Add carrot mixture to flour mixture; stir until combined.
- Spread batter into lightly greased 9 x 13-inch baking pan.
- Bake at 350u0b0 for 25 minutes or until bars test done.
- Place on wire rack to cool completely.
- Frost with icing. Cover and store in refrigerator.
