Pear Clafouti

  1. Poach pears in water, pear liquor, and sugar about 10 minutes
  2. When cooked, cool and dice.
  3. Scrape seeds from the vanilla bean.
  4. Mix with beaten eggs, sugar, and flour.
  5. Add cream and mild.
  6. Mix well.
  7. Strain and let batter rest for 10 minutes.
  8. Butter baking dishes with soft unsalted butter, and then coat with sugar.
  9. Place fruit in bottom of dish and pour batter over fruit.
  10. Bake at 400 degrees (200 C.) for 25 minutes.
  11. Can be served warm or cooled.
