Crab Au Gratin

  1. Preheat oven to 450u0b0.
  2. Combine lemon juice, pepper and onion. Toss with crabmeat and set aside.
  3. Melt butter and blend with flour.
  4. Stir in cream and sherry.
  5. Heat and stir until thickened. Add 1/2 cup cheese.
  6. Slowly stir in egg yolk.
  7. Allow to cool slightly before folding in crabmeat.
  8. Pour into well buttered casserole.tpread remaining cheese on top.
  9. Sprinkle with paprika.
  10. Bake 15 to 20 minutes until hot and bubbly.
