White Fruit Cake
- 1 c. baking oil (Wesson or Crisco)
- 1 1/2 c. sugar
- 4 eggs
- 2 c. flour
- 1 tsp. salt
- 2 tsp. baking powder
- 1 c. pineapple juice
- 1 c. flour
- 4 c. candied mixed fruit of your choice
- 3 c. white raisins
- 2 c. chopped nutmeats
- Combine
- the
- oil,
- sugar and eggs; beat together for 2 minutes.
- Add
- thetlour,talt
- and
- baking powder.
- Stir in alternately with the pineapple juice.
- Coat fruit, raisins and nuts
- with the flour.
- Pour batter on the fruit; mix thoroughly. Pour
- intot
- greased and floured loaf pan.
- Bake on the lower shelf of oven at 275u0b0 for 2 1/2 to 3 hours.
- Cool before removing from
- pan.then cool, wrap in aluminum foil.
- Store in refrigerator for at least a week or more.
