Yummy Refrigerator Dessert
- 1 (7 1/2 oz.) box vanilla wafers
- 3 Tbsp. melted butter
- 3 eggs
- 3 c. confectioners sugar
- 1/2 tsp. vanilla
- 1/2 c. softened butter
- 1 c. chopped pecans or walnuts
- No. 2 can crushed pineapple
- 1/2 pt. cream for whipping
- Crush vanilla wafers.
- Mix 1/2 of the crumbs with 2 tablespoons melted butter and spread in bottom of 8 or 9-inch square Pyrex dish.
- Beat eggs until frothy and add confectioners sugar, vanilla and 1/2 cup softened butter.
- Place egg mixture over crumbs; sprinkle 1/2 cup nuts over egg mixture.
- Top nuts with pineapple.
- Top pineapple with 1/2 pint stiffly beaten whipped cream.
- Sprinkle rest of cookie crumbs over whipped cream. Refrigerate for at least 12 hours.
- Top each serving with maraschino cherry.
