Stove Top Peanut Butter Pie
- 2/3 c. sugar
- 2 1/2 Tbsp. cornstarch
- 1 Tbsp. all-purpose flour
- 1/2 tsp. salt
- 3 c. milk
- 3 slightly beaten egg yolks
- 1/2 c. peanut butter
- 1 Tbsp. butter or margarine
- 1 baked 9-inch pie shell or graham cracker crust
- hot fudge topping
- In saucepan, combine sugar, cornstarch, flour and salt.
- Add milk and cook over low heat, stirring constantly, until mixture thickens and boils. Cook 2 minutes longer.
- Remove from heat and stir a small amount of the hot mixture into egg yolks.
- Return to hot mixture. Cook 1 minute longer, stirring constantly. Add peanut butter and butter. Stir until blended. Pour into cooled pastry shell. Allow filling to cool. Top at serving time with hot fudge topping.
- Garnish with Cool Whip and Reese's pieces.
