Powerhouse Vegetable Medley with Chicken & Rice

  1. Preheat lightly oiled grill to medium-hot.
  2. Grill chicken breasts until no longer pink inside, turning once.
  3. Serve with rice in equally divided portions.
  4. Bring 1/4 cup of the dressing and the carrots to boil in a medium saucepan.
  5. Reduce heat to low; cover and simmer for 4 min.
  6. Stir in broccoli; cover and continue to simmer for 4 min.
  7. or until crisp-tender.
  8. Toss vegetables with remaining dressing, spinach, cheese and bacon bits.
  9. Enjoy JELL-O for dessert (1 per person).
  10. Serve each person an 8 fl oz glass of water with the meal.
