Pressure Cooker Refried Beans

  1. Rinse pinto beans and remove foreign materials, shriveled beans, etc.
  2. Add all pressure cooker items to pressure cooker and give a quick stir.
  3. Bring pressure cooker to high pressure and hold for 30 minutes.
  4. Remove bay leaf and garlic and blend to your desired consistency (chunky or smooth).
  5. In a frying pan, add oil and saute the onions, garlic and jalapenos until soft (about 5 minutes).
  6. Add spices and saute another minute or two to combine with veggies.
  7. Add beans and fry together another five minutes or so.
  8. Adjust salt and spices as necessary.
  9. Serve with a dallop of sour cream or your choice of cheese on top.
