Pressure Cooker Refried Beans
- 1 cup pinto beans
- 2 clove garlic
- 1 bay leaf
- 3 cup water
- 1/4 cup vegetable oil
- 1 onion, chopped
- 2 clove garlic
- 1 jalapeno
- 1/2 tsp salt
- 1 tbsp chili powder
- 1 tbsp ground cumin
- 1 pinch cayenne pepper
- 1 tsp salt
- 1 tsp pork seasoning
- Rinse pinto beans and remove foreign materials, shriveled beans, etc.
- Add all pressure cooker items to pressure cooker and give a quick stir.
- Bring pressure cooker to high pressure and hold for 30 minutes.
- Remove bay leaf and garlic and blend to your desired consistency (chunky or smooth).
- In a frying pan, add oil and saute the onions, garlic and jalapenos until soft (about 5 minutes).
- Add spices and saute another minute or two to combine with veggies.
- Add beans and fry together another five minutes or so.
- Adjust salt and spices as necessary.
- Serve with a dallop of sour cream or your choice of cheese on top.
