Banana Bran Loaf
- 1 3/4 c. all-purpose flour
- 1 c. bran cereal (not flakes)
- 2/3 c. granulated sugar
- 2 3/4 tsp. baking powder
- 1/2 tsp. salt
- 1/3 c. butter or margarine
- 1 c. mashed ripe bananas (about 2 large bananas)
- 2 eggs, beaten
- 1/4 c. milk
- 1/2 c. dates, snipped (optional)
- 1/2 c. chopped walnuts (optional)
- Combine first five ingredients in a large bowl.
- With pastry blender or two knives, cut in butter or margarine until mixture resembles coarse cornmeal.
- Add next 3 ingredients and, if desired, dates and nuts.
- Mix just until blended.
- Pour into a greased 9 x 5 x 3-inch loaf pan.
- Bake in a preheated moderate oven (350u0b0) for 50 to 60 minutes or until done.
- Cool in pan for 10 minutes, then remove to rack to cool completely.
- Makes 1 (9-inch) loaf.
