Thai Cole Slaw
- 1 (16 ounce) packageof pre-shredded cabbage and carrots
- 2 tablespoons chopped cilantro
- 14 cup roasted unsalted peanuts (coarsely chopped)
- 1 12 tablespoons lime juice
- 1 12 tablespoons fish sauce
- 1 tablespoon finely chopped serrano peppers (remove seeds) or 1 tablespoon jalapeno pepper (remove seeds)
- 1 12 teaspoons minced garlic
- 1 12 teaspoons sugar
- 14 teaspoon black pepper
- 12 cup mayonnaise (low fat mayonnaise also works well with this recipe)
- Combine the lime juice, fish sauce, serrano peppers, garlic, sugar, black pepper and mayonnaise with a whisk for the dressing.
- Combine dressing and cole slaw mixture.
- Refrigerate for a minimum of 1-2 hours.
- Top mixture with the cilantro and chopped peanuts when ready to serve.
