Banana Bran Muffins
- 1 large egg or Egg Beaters
- 3/4 c. packed brown sugar or honey
- 1 1/3 c. mashed ripe bananas
- 1 1/2 c. whole wheat flour
- 1 c. table bran (unprocessed)
- 1/2 c. raisins
- 1/2 c. chopped walnuts
- 1/3 c. vegetable or olive oil
- 1 tsp. vanilla
- 1 to 2 tsp. banana flavoring
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 2 tsp. baking powder
- 1/4 tsp. salt
- Grease 12 muffin cups or use baking cups.
- Beat egg and sugar together.
- When smooth, beat in bananas, raisins, walnuts, oil, vanilla and banana flavoring.
- Let stand 1 minute.
- Thoroughly mix flour, bran, baking powder, baking soda, cinnamon and salt together.
- Add to the banana mixture; fold in just until ingredients are moistened.
- Divide batter into the muffin cups and bake for 20 to 25 minutes at 400u0b0 until browned and springy to the touch in the center.
- Turn out onto rack to cool.
