Beef and Pepper Ragout
- 1 1/2 lb. stewing beef Whole Foods 1 lb For $7.99 thru 02/09
- 2 Tbsp. flour
- 1 Tbsp. oil
- 2 onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 3 cloves garlic, minced
- 1 carrot, chopped
- 1/2 tsp. dried oregano leaves
- 2 bay leaves
- 1 can (28 fl oz/ 798mL) Primo Plum Tomatoes
- 1/2 cup red wine
- 1/4 cup Primo Tomato Paste
- 1 each: red and green pepper, chopped
- Toss beef with flour.
- Brown in oil, in large saucepan over medium-high heat.
- Remove from pan and set aside.
- Cook onion, garlic and carrot for 5 minutes.
- Stir in oregano, bay leaves, tomatoes, red wine and tomato paste.
- Return beef to pot, bring to boil, reduce heat and simmer 1 hour, stirring occasionally.
- Stir IN peppers.
- Cook 45 minutes or until meat is tender.
- Remove bay leaves and serve.
