Beef and Pepper Ragout

  1. Toss beef with flour.
  2. Brown in oil, in large saucepan over medium-high heat.
  3. Remove from pan and set aside.
  4. Cook onion, garlic and carrot for 5 minutes.
  5. Stir in oregano, bay leaves, tomatoes, red wine and tomato paste.
  6. Return beef to pot, bring to boil, reduce heat and simmer 1 hour, stirring occasionally.
  7. Stir IN peppers.
  8. Cook 45 minutes or until meat is tender.
  9. Remove bay leaves and serve.
