Coffee and Cream Mousse

  1. Pour the cream into a large mixing bowl.
  2. Gently stir in the instant coffee until dissolved.
  3. Gently stir in the Splenda and vanilla.
  4. Gradually whisk in the pudding mix until no longer grainy, then briskly whisk until thick.
  5. Chill well before serving.
  6. Can be frozen.
