Banana Chocolate Chip Muffins Recipe
- 3 lrg Bananas, ripe
- 1/2 c. Butter, softened
- 1/2 c. Brown sugar, firmly packed
- 2 x Large eggs
- 1/4 c. Lowfat milk
- 1 tsp Vanilla
- 2 c. All-purpose flour
- 1 tsp Baking pwdr
- 1 tsp Baking soda
- 1/4 tsp Salt
- 1/2 c. Miniature chocolate chips
- 1.

- - Heat oven to 375 F.
- 2.
- Place 18 paper baking c. in 18 muffin pan c..
- 3.
- Peel bananas and place in pie pan.
- Mash bananas with fork.
- Save till Step 8.
- 4.
- Place butter in large bowl.
- Measure and add in brown sugar.
- 5.
- Beat with wooden spoon till well mixed.
- 6.
- Crack Large eggs 1 at a time into custard c. and add in to brown sugar mix.
- 7.
- Measure and add in lowfat milk and vanilla.
- 8.
- Add in bananas and mix well.
- 9.
- Lightly spoon flour into measuring c. and level off with spatula.
- Add in flour to banana mix.
- 10.
- Measure, level off with spatula and add in baking pwdr, baking soda, and salt.
- Stir with wooden spoon just till all dry ingredients are moistened.
- 11.
- Measure and stir in chocolate chips.
- 12.
- Spoon batter into paper-lined muffin c., pushing batter from spoon with rubber scraper, till each c. is a little more than half full.

- - Set timer and bake muffins at 375 F for 20 to 25 min or possibly till a toothpick inserted into
- the center of a muffin comes out clean.
- 14.

- - Using potholders, remove pans from oven.
- Place pans on wire racks and let muffins cold in
- pans for 3 min.
- 15.
- Remove muffins from pans and serve hot.
