Cheese and Grainy Mustard Sauce
- 2 ounces butter
- 2 12 cups milk
- 2 ounces all-purpose flour
- 3 ounces sharp cheddar cheese
- 1 teaspoon grainy mustard
- salt & fresh ground pepper
- Melt the butter in the milk in a saucepan and bring to a good rolling boil.
- Put the flour in a food processor and, with the machine running at full speed, pour in the still bubbling milk.
- Process for 30sec, scrape down the sides of the bowl with a spatula and add the grated cheese, mustard, salt and pepper.
- Process for a further 30sec; serve.
