Granola Pumpkin Bread
- 1 c. butter, softened
- 3 c. sugar
- 3 eggs
- 1 tsp. vanilla extract
- 1/2 tsp. orange extract
- 1 (16 oz.) can pumpkin
- 1/4 tsp. salt
- 3 c. sifted flour
- 1 1/2 tsp. baking powder
- 1 tsp. soda
- 1 tsp. each cloves, cinnamon, nutmeg and ginger
- 1 1/2 c. chopped nuts
- 1 c. raisins and/or dates
- 1 1/2 c. granola
- Cream butter and add sugar; beat in eggs and extract.
- Add pumpkin; mix well.
- Sift together flour, salt, soda, baking powder and spices.
- Blend with pumpkin mixture.
- Stir in nuts, raisins and cereal.
- Add 1/2 cup orange juice if dough seems too heavy.
- Divide into 3 greased and floured 9 x 5 x 3-inch loaf pans.
- Bake at 350u0b0 , 60 minutes.
- Test with toothpick after 50 minutes.
- Yields 3 loaves.
