Salt Rising Bread(Alabama Tech Extension Service)

  1. Scald milk and stir in enough cornmeal to make a batter.
  2. Add salt.
  3. (Do this about 3 p.m. in winter and 8 p.m. in summer.)
  4. At 5 or 6 a.m., add 1/2 cup tepid water and enough flour to make a stiff batter.
  5. Set in a vessel of warm water and keep at an even temperature.
  6. Watch carefully and if water forms on top, as it sometimes does, add 1 tablespoon flour.
  7. Let rise and add 4 cups flour, 2 tablespoons lard, 1/2 teaspoon salt and 1 tablespoon sugar.
  8. A little warm water may be added, if necessary, to make a soft dough.
  9. Knead well and put in greased pans to rise.
  10. This makes 2 small loaves.
  11. Grease the top when it rises well and bake in a moderate oven at 375u0b0.
