Harlequin Shrimp

  1. Warm the olive oil and lemon juice in a small saucepan.
  2. Do not allow the mixture to come to the boil.
  3. Season to taste.
  4. Toss the shrimp in the warm olive oil and arrange on serving plates.
  5. Sprinkle with chopped peppers and chives and decorate with sprigs of fresh herbs.
