Cucumber and asparagus soup
- 1 1/2 cup fresh chopped asparagus
- 6 cup grated and chopped cucumbers
- 2 cup plain yogurt
- 2 quart vegetable broth
- 1/3 cup fresh chopped dill
- 1/3 cup fresh chopped parsley
- 2/3 stick butter
- 1/3 cup chives
- 2/3 tsp salt
- 2/3 tsp granulated garlic powder
- 1/2 tsp rubbed sage
- Take butter and asparagus and fry in a deep pan
- Add garlic amd salt cover and simmer
- Add the broth after 7 minutes of simmering add cucumbers
- Add the yogurt after the cucumbers are bubbling stir well add chives, parsley, sage, and dill cover
- Stir after the soup bubbles cover cook 3 minutes remove from heat you can serve or chill serve cold.
- I served with cheese and buttered croutons.
