Applesauce Cake
- 14 lb butter
- 1 cup sugar
- 2 eggs
- 1 teaspoon baking soda
- 2 cups flour
- 1 cup applesauce
- 1 cup chopped dates
- 1 cup chopped nuts, your choice
- 14 cup chopped candied citron peel
- Cream butter and sugar with hand mixer or stand mixer.
- Add eggs one at a time, beating well after each addition.
- Stir baking soda into applesauce.
- Add to butter-sugar-egg mixture.
- Toss dates, nuts and citron with flour until coated.
- Stir in wet mixture.
- Pour into greased loaf pan.
- Bake at 350F for 1 hour or until a toothpick inserted in the center comes out clean.
