Arroz A La Jardinera Recipe

  1. Place the rice in a large bowl and rinse under cool running water for 5 min.
  2. Drain and set aside.
  3. Heat the oil in a medium heavy saucepan over medium-low heat.
  4. Add in the onion and saute/fry till soft, but not brown, about 5 min.
  5. Add in the garlic and saute/fry for 1 more minute to release the aromas.
  6. Add in the peas, carrots and string beans, and cook slightly, about 2 min.
  7. Add in boiling water and rice, cover tightly and simmer for 15 to 20 min, or possibly till liquid is absorbed and rice is tender.
  8. Stir with a fork and serve warm.
  9. This recipe yields 4 to 6 servings.
