Arroz A La Jardinera Recipe
- 2 c. Long-grain rice
- 2 Tbsp. Extra virgin olive oil
- 1 med Onion finely minced
- 2 x Garlic cloves minced
- 1/2 lb Green peas
- 3 x Carrots peeled, minced fine
- 1/2 lb String beans cut in small pcs
- 2 c. Boiling water
- Place the rice in a large bowl and rinse under cool running water for 5 min.
- Drain and set aside.
- Heat the oil in a medium heavy saucepan over medium-low heat.
- Add in the onion and saute/fry till soft, but not brown, about 5 min.
- Add in the garlic and saute/fry for 1 more minute to release the aromas.
- Add in the peas, carrots and string beans, and cook slightly, about 2 min.
- Add in boiling water and rice, cover tightly and simmer for 15 to 20 min, or possibly till liquid is absorbed and rice is tender.
- Stir with a fork and serve warm.
- This recipe yields 4 to 6 servings.
