Greek-Style Lemon Roast Chicken

  1. Rinse chicken; pat dry with paper towel.
  2. Sprinkle inside and out with salt and pepper.
  3. Place in a 13x9-inch baking dish.
  4. Squeeze the juice from lemon and mix with dressing in small bowl.
  5. Place the squeezed lemon halves inside the cavity of the chicken.
  6. Drizzle dressing mixture over chicken.
  7. Insert meat thermometer into the thickest part of one of the chicken's thighs.
  8. Bake at 350F for 1-1/2 hours or until chicken is cooked through (reaches an internal temperature of 180F), basting occasionally.
