Chicken and Roasted Red Pepper Skewers

  1. Thread chicken evenly onto 12 wooden skewers; place in shallow dish.
  2. Place mayo, peppers and garlic in blender container; cover.
  3. Blend until smooth.
  4. Reserve 1/4 cup of the mayo mixture; set aside.
  5. Pour remaining mayo mixture over skewers; cover.
  6. Refrigerate 30 min.
  7. to marinate.
  8. Preheat broiler.
  9. Remove skewers from marinade; discard marinade.
  10. Place skewers on rack of broiler pan.
  11. Broil 4 to 6 inches from heat for 10 min.
  12. or until chicken is cooked through, turning skewers occasionally.
  13. Sprinkle evenly with paprika.
  14. Serve with the reserved mayo mixture.
