Crisp Florentine Cookies

  1. Preheat oven to 325F.
  2. Heat cream, sugar and salt together.
  3. Place nuts, candied peel and flour in a food processor with the steel blade, and chop coarsely, turning the machine on and off.
  4. Stir this into hot ingredients and cook until the mixture thickens, about 2 minutes.
  5. Drop by teaspoons, 2-inches apart, on a well-greased cookie sheet.
  6. Bake for 12 minutes, until brown around the edges.
  7. Cool slightly on sheet.
  8. Remove and let cool until crisp.
