Rice With Almonds and Pine Nuts
- 2 12 cups water
- 1 cup brown rice, uncooked
- 14 cup coarsely chopped almonds
- 3 tablespoons pine nuts
- 3 tablespoons honey
- 1 12 tablespoons reduced sodium soy sauce
- Bring water to a boil in a medium saucepan.
- Add rice.
- When water boils again, reduce heat to low, cover, and simmer 45 minutes, until rice is tender and most of the liquid has cooked out.
- Remove from heat and let stand covered, 5 minutes.
- While rice is cooking, heat a small nonstick skillet over medium-high heat.
- Spray with a nonstick cooking spray.
- Place almonds and pine nuts in skillet and cook, stirring constantly, just until nuts are lightly toasted.
- Spoon hot rice into a serving bowl and add nuts, along with honey and soy sauce.
- Mix well.
- Serve Hot.
