The Vicar'S Irish Soda Bread
- 1 tsp. salt
- 2 1/2 tsp. sugar
- 1 1/2 tsp. cream of tartar
- 2 tsp. baking soda
- 3 Tbsp. wheat germ
- 2 c. all-purpose white flour
- 4 c. whole wheat flour
- 1 1/2 c. milk
- 1/2 c. sour cream
- Blend together all dry ingredients.
- Make a well in the middle and add milk and sour cream.
- Blend until it holds together.
- Knead in the bowl about 4 minutes.
- Shape dough into a ball and then flatten it until it is about 3 inches high and slightly rounded on top.
- Place loaf on greased cookie sheet.
- Score a cross about 1/2-inch deep on top.
- Lightly rub top of loaf with milk.
- Bake for 45 minutes in preheated 400u0b0 oven.
- Flip loaf over onto its top and bake another 5 minutes.
- Wrap in a damp dish towel and stand loaf on its side to cool.
