Savory Pepper Steak
- 1 1/2 lb. beef round steak (1/2-inch thick), cut in strips
- 1/8 tsp. pepper
- 1 (8 oz.) can tomatoes
- 1/2 c. onion, chopped
- 1 Tbsp. beef flavored gravy base
- 2 large green peppers, cut in strips
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/4 c. hot shortening
- 1 3/4 c. water
- 1 small garlic clove, minced
- 1 1/2 tsp. Worcestershire sauce
- Coat steak with mixture of flour, salt and pepper.
- In large skillet, brown strips in shortening.
- Drain tomatoes, reserving liquid.
- Add reserved liquid, water, onion, garlic and gravy base to meat.
- Cover; simmer 1 1/4 hours or until meat is tender. Uncover; stir in Worcestershire and add green peppers.
- Cover; simmer meat and peppers for 5 minutes.
- If gravy is too thin, combine 1 to 2 tablespoons all-purpose flour with an equal amount of cold water; stir into sauce.
- Cook and stir until thickened and bubbly.
- Add drained tomatoes, cut up; cook 5 minutes more. Serve over hot cooked rice.
- Makes 6 servings.
