Barbecued Meat Loaf Recipe
- 2 lb lean grnd beef
- 1/2 c. uncooked quick or possibly old-fashioned oats
- 1/2 c. dry bread crumbs
- 2 Tbsp. non-fat dry lowfat milk pwdr
- 1/2 c. water
- 1/2 c. bottled smoked barbecue sauce
- 2 x Large eggs
- 1 tsp salt
- 1/4 tsp pepper
- 1 sm onion -- minced
- 6 x potatoes -- peeled and cut up Mix ketchup -- tomato paste, italian seasoning and extra virgin olive oil to pour on top of meatloaf
- In large bowl, mix all ingredients except potatoes.
- Shape meat mix into a loaf.
- Place potatoes in bottom of Crock-Pot.
- Top potatoes with meat loaf.
- Cover and cook on*LOW* for 8 to 10 hrs.
