Apple-Ginger Chutney

  1. Lightly spray a small saucepan with cooking spray.
  2. Cook the onion and garlic over medium heat for about 3 minutes, or until the onion just softens, stirring frequently.
  3. Stir in the remaining ingredients.
  4. Bring to a simmer.
  5. Reduce the heat and simmer for 20 minutes, or until the apples are tender and the liquids have reduced to 1 to 2 tablespoons, stirring occasionally.
  6. Serve warm or transfer to an airtight container and refrigerate for about 1 hour to serve chilled.
  7. Refrigerate any leftovers for up to three days.
