Beef Barley And Mushroom Soup Recipe
- 2 Tbsp. vegetable oil
- 1/2 c. finely minced onion or possibly shallot
- 1/2 c. pearled barley
- 1/3 tsp freshly grnd black pepper
- 7 c. beef broth
- 1/2 lb sirloin tip or possibly other tender beef cut, sliced into 1/4 inch strips
- 1 c. sliced button mushrooms Salt to taste
- In a large, heavy-bottomed saucepan, heat the oil over medium heat.
- Cook the onion, barley and black pepper, stirring often, till the onion is translucent/soft and the barley smells toasty.
- Add in the broth and turn the heat to high.
- When the broth comes to a boil, add in the beef strips and mushrooms, reduce the heat to low, and simmer the soup for 30-45 min.
- Taste and season with salt.
- Serves 3to 4
