Beef Barley And Mushroom Soup Recipe

  1. In a large, heavy-bottomed saucepan, heat the oil over medium heat.
  2. Cook the onion, barley and black pepper, stirring often, till the onion is translucent/soft and the barley smells toasty.
  3. Add in the broth and turn the heat to high.
  4. When the broth comes to a boil, add in the beef strips and mushrooms, reduce the heat to low, and simmer the soup for 30-45 min.
  5. Taste and season with salt.
  6. Serves 3to 4
