Awesome Onion Gravy
- olive oil
- 1 onion, diced
- garlic powder
- 2 tablespoons butter
- 2 tablespoons flour
- 1 tablespoon tomato paste
- 1 12 cups vegetable stock
- Worcestershire sauce
- reduced sodium soy sauce
- black pepper
- Saute onion and some garlic powder in olive oil 30 minutes or until very tender (low heat; don't brown onions).
- Add butter and flour to make roux; cook it for about 5 minutes.
- Add tomato paste and cook another minute or so.
- Add vegetable stock; mix well to thicken.
- Add a few shots of Worcestershire sauce to get it a little brown.
- Use soy sauce as salt (to taste) to make it a bit darker.
- Add pepper to taste.
