Company Cheese Cake

  1. Heat oven to 350u0b0.
  2. Mix cracker crumbs and 2 tablespoons sugar or margarine.
  3. Press in bottom of 9-inch spring-form pan.
  4. Bake for 10 minutes; cool.
  5. Heat oven to 300u0b0.
  6. Beat cream cheese in large mixer bowl.
  7. Add 1 cup sugar gradually, beating until fluffy.
  8. Add lemon peel and vanilla.
  9. Beat in 1 egg at a time. Pour over crumb mixture.
  10. Bake until center is firm, about 1 hour. Cool to room temperature.
  11. Refrigerate at least 3 hours, but no longer than 10 days.
  12. Loosen edge of cheese cake with knife before removing sides of pan.
  13. Top with sour cream or glaze.
