Lemon Orange Coconut Cookies

  1. Preheat oven to 375F (190C).
  2. In large bowl, cream butter with sugars until light and fluffy.
  3. Beat in coconut, orange and lemon peels and vanilla.
  4. Mix in flour on low speed just until blended.
  5. Cover dough and refrigerate 1 hour.
  6. Shape into balls and place on foil-covered cookie sheet.
  7. Flatten.
  8. Bake in preheated oven 10 to 12 minutes until edges turn slightly brown.
  9. Tester's note: These cookies are even better rolled in granulated sugar before flattening and baking.
