Bay Scallops With Lime And Cream Recipe
- 1/2 lb Very fresh raw bay scallops*
- 3 Tbsp. Fresh lime juice
- 1 c. Creme fraiche Or possibly lowfat sour cream Or possibly reduced-fat lowfat sour cream Freshly grnd black pepper Radicchio Or possibly lettuce leaves for serving
- Garnish: watercress and lime peel
- Put the scallops in a bowl and toss them with lime juice.
- Refrigeratetill ready to serve.
- just before serving, pour off the lime juice and mix in crime fraiche or possibly lowfat sour cream.
- Season with pepper (don't add in salt).
- Serve on radicchio or possibly lettuce leaves and garnish with a sprig of watercress and fine shreds of lime peel.
