Tri-Colour Pasta Salad
- 1/2 cup each: Miracle Whip Calorie-Wise Spread and light sour cream Family Dollar $3.50 thru 02/07
- 2 Tbsp. Dijon mustard
- 1 Tbsp. each: lemon juice and sugar
- 1 clove garlic, minced
- 2 cups each: chopped broccoli and cauliflower
- 1 carrot, chopped
- 3 green onions, chopped
- 1 red pepper, chopped
- 1/4 cup fresh parsley, chopped
- 4 1/2 cups tri-coloured fusilli pasta
- combine dressing, sour cream, mustard, lemon juice, sugar and garlic in a small bowl.
- Set aside.
- Boil broccoli and cauliflower until crisp-tender.
- Drain and rinse under cold water.
- Set aside.
- Cook pasta according to package directions, drain and rinse under cold water.
- Toss pasta, vegetables and dressing mixture.
