Lemon Rosemary Shrimp Scampi

  1. Preheat your ovens broiler.
  2. Bring a large pot of water to a boil.
  3. Salt it well, add the orzo and cook according to the package directions.
  4. Drain when done.
  5. While the orzo is cooking, heat olive oil in a cast-iron skillet over medium-high heat.
  6. Add shallot and cook until translucent.
  7. Add shrimp and cook until just beginning to turn pink.
  8. Add the Skillet Sauce and bring to a boil.
  9. Then turn heat to low and simmer until shrimp are completely cooked through and pink.
  10. Remove skillet from heat.
  11. In a small bowl, mix butter, panko, rosemary, red pepper, lemon juice, and lemon zest.
  12. Top each shrimp (still in the skillet) with a bit of the butter mixture.
  13. Transfer skillet to the oven and broil until the butter has melted and the breadcrumbs are beginning to brown (this took about 2 minutes in my broiler).
  14. Spoon shrimp and sauce over cooked orzo.
  15. Serve with lemon wedges and chopped rosemary.
