First-Degree BBQ Pork Sandwiches

  1. Sprinkle 3 Tbsp.
  2. of the chili powder evenly over pork (or 1-1/2 Tbsp.
  3. of the chili powder for trial recipe).
  4. Place in full hotel pan (or half hotel pan for trial recipe); cover with foil.
  5. Bake in 275F-standard oven for 3 hours (or in 250F-convection oven for 1-1/2 hours) or until pork is cooked through (160F).
  6. Remove pork from pan; cool slightly.
  7. Meanwhile, combine barbecue sauce, remaining 1 Tbsp.
  8. chili powder (or remaining 1/2 Tbsp.
  9. chili powder for trial recipe), the tomato sauce, brown sugar, molasses, garlic, salt and pepper in large saucepan.
  10. Shred meat.
  11. Add to ingredients in saucepan; cook over medium-low heat until heated through, stirring occasionally.
  12. Spoon into rolls just before serving.
