Szechwan Peanut Chicken
- 2 whole chicken breasts, boned, skinned and cut into 1-inch pieces
- 4 tsp. soy sauce
- 1 clove garlic, minced
- 2 tsp. finely shredded fresh ginger
- 1 Tbsp. peanut or vegetable oil
- 1 small red pepper, cut into 3/4-inch pieces
- 1/2 c. picante sauce
- 2 Tbsp. creamy peanut butter
- 3 green onions, cut diagonally into 1/2-inch pieces
- hot, cooked rice
- 1/4 c. coarsely chopped peanuts
- Combine chicken, soy sauce, garlic and ginger; set aside 10 minutes.
- Heat oil in 10-inch skillet over medium-high heat.
- Cook chicken mixture in oil until no longer pink, about 3 minutes.
- Add red pepper, picante sauce and peanut butter.
- Cook and stir 4 minutes.
- Add green onions; heat through.
