Refrigerator Rolls
- 2 pkg. yeast
- 1 c. lukewarm water
- 3 tsp. salt
- 1 c. sugar
- 1/4 c. instant mashed potatoes, moistened with water to make 1/2 c. potatoes
- 1 pt. milk
- 2/3 c. shortening
- 10 c. bread flour
- Pour yeast into water and let stand 5 minutes.
- Scald milk; add sugar and salt.
- Let cool.
- When lukewarm, add to yeast; add 1/2 flour and potatoes.
- Beat until smooth.
- Add shortening and rest of flour to make soft dough.
- May need to knead a few minutes.
- Let set in warm place until double in size.
- Knead dough and refrigerate; cover with wax paper or plastic bag.
- Two hours before needed, shape in rolls.
- Let rise.
- Bake at 375u0b0 for 15 to 20 minutes or until golden brown.
- Take out of oven and brush with butter.
