Texas - Style BBQ sauce
- 1/2 lb pickling spice
- 1 tsp whole clove
- 1 medium onion, chopped
- 2 stalks celery, chopped
- 36 oz ketchup
- 1/2 cup chili sauce
- 1 quart qater
- 1/2 cup cider vinegar
- 1 tsp dry mustard
- 1/2 cup worcesrershire sauce
- 1/2 cup firmly packed light brown sugar
- 1/4 tbsp garlic powder
- 1 tbsp salt
- 1 tbsp tabasco
- 2 tbsp lemon juice
- Tie pickling spices and cloves loosely in cheese cloth bag.
- Combine all ingredients in a heavy pot; bring to boil.
- Reduce heat to simmer slowly about 1/2 hrs.
- Remove from heat; cool partially.
- Remove spice bag.
- Pour mixture interest blender and blend til smooth.
- Cover til ready to serve.
- Yields 2 Qts.
