Shrimp & Vodka Penne

  1. Melt the butter in a saucepan.
  2. Stir in the vodka and crushed red pepper.
  3. Simmer for 2 minutes.
  4. Stir in the tomatoes and cream.
  5. Simmer for 5 minutes.
  6. Add the salt and mix well.
  7. Remove from the heat.
  8. Place the penne in a warm serving bowl.
  9. Add the tomato mixture along with the shrimp and toss gently.
  10. Sprinkle with the Parmesan cheese.
  11. Garnish with chopped fresh basil leaves if desired and serve immediately.
