Shrimp & Vodka Penne
- 7 Tablespoons Butter
- 3/4 cups Vodka
- 3/4 teaspoons Crushed Red Pepper
- 14 ounces, weight Crushed Tomatoes In Puree
- 3/4 cups Heavy Cream
- 1 teaspoon Salt
- 16 ounces, weight Penne, Cooked Al Dente, Drained
- 1 pound Boiled Shrimp, Shelled, Deveined
- 4 ounces, weight Freshly Grated Parmesan Cheese
- Chopped Fresh Basil Leaves, For Garnish (optional)
- Melt the butter in a saucepan.
- Stir in the vodka and crushed red pepper.
- Simmer for 2 minutes.
- Stir in the tomatoes and cream.
- Simmer for 5 minutes.
- Add the salt and mix well.
- Remove from the heat.
- Place the penne in a warm serving bowl.
- Add the tomato mixture along with the shrimp and toss gently.
- Sprinkle with the Parmesan cheese.
- Garnish with chopped fresh basil leaves if desired and serve immediately.
