Apple Buttermilk Pie

  1. Preheat oven to 325F.
  2. To prepare streusel, combine flour, brown sugar and cinnamon in a small bowl, cut in butter with a pastry blender until the mixture resembles coarse meal.
  3. A mini-chopper is handy for this if you have one.
  4. Store in refrigerator until ready for use.
  5. For filling: heat a large nonstick skillet coated with cooking spray over medium heat.
  6. Add sliced apples, 1/4 cup granulated sugar and cinnamon.
  7. Cook for about 10 minutes, or until apples begin to soften.
  8. Stir occasionally.
  9. Spoon apple mixture into prepared crust.
  10. Combine remaining 3/4 cup granulated sugar, 2 tbsp.
  11. flour, salt and eggs, stirring with a whisk.
  12. Stir in buttermilk and vanilla.
  13. Pour over the apple mixture.
  14. Bake at 325F for 30 minutes.
  15. Reduce the oven temperature to 300F (do not remove from oven); sprinkle streusel over pie.
  16. Bake at 300F for 40 minutes or until set.
  17. Let stand 1 hour before serving.
