Bristol Ice Box Cake Recipe
- 1/4 c. Butter, melted
- 2 c. Crushed pineapple, liquid removed
- 1/2 c. Sugar
- 1/2 c. Pecans, minced
- 3 c. Vanilla wafer crumbs
- 1/2 pt Heavy cream, whipped
- Mix first 4 ingredients.
- Line a 1 qt dish with a layer of crumbs, then a layer of mix.
- Repeat the process, ending with crumbs.
- Chill 3-4 hrs or possibly overnight.
- To serve, garnish with whipped cream.
- Could substitute CoolWhip if you like.
